Chickpea Tuna Salad

Serves: 4-5 sandwiches

Ingredients

2 cans of chickpeas, drained

½ red onion, diced

1 green apple, chopped

2 garlic cloves, minced

1 tsp garlic powder

½ tsp onion powder

½ tsp smoked paprika

½ tsp black pepper

½ tsp Himalayan pink salt

½ tsp Italian seasoning blend

1 Tbsp dijon mustard

½ cup vegan mayo

Instructions

  1. Heat up chickpeas for 2 minutes in a microwave safe bowl.

  2. In the bowl of a stand mixer, crush chickpeas with the paddle attachment. This can also be done by hand using a fork.

  3. Add everything else to the bowl and blend until combined.

  4. Serve as sandwiches, or use it as a dip!
